Couldn't you just go into the saturation/hue adjustment area, bring down the saturation to your liking (all the way to B&W) and run the history brush over the flowers too? Doesn't that make for fewer steps?
Nope. Nothing wrong with your method, but his is definitely faster. New Adjustment Layer/Black n White > Color in with black/white to add back in the color. Only two steps and a layer which is always best.
I don't understand this at all. I open an image, open a black and white adjustment layer, but when it will NOT allow me to select a brush or paint or anything. Its very frustrating

You now have a black and white photo to work on.
Make sure foreground is black, select brush and just paint over where you want colour to appear.

Unfortunately, there's not a Black and White adjustment layer in CS2. You can however, get good black and white by adding a Channel Mixer adjustment layer. Click the Monochrome checkbox and then adjust the channel values until you get something you like. Note that the channel values must add up to 100 percent. For example, a good mix would be 60 percent green and 40 percent red. The blue channel is typically where you find the noise, so avoid using that in your mix.

Have you checked if the layer is linked or BG layer isnt locked. Press alt and double click to unlock.

I figured out the GIMP version by watching. Follow these steps:
1. Open and select photo (layer 1.)
2. Click on "Layers." Choose "Duplicate Layer."
3. Click on "Colors." Go to "Hue Saturation." Reduce saturation to -100. (or B&W.)
4. Go to "Layer." Go to "Mask." Click on "Add Layer Mask."
5. Go to "Tools." Choose painbrush and size. Choose black square to reveal color and white square to cover it
6. Paint away!
7. Go to "Image." Choose "Flatten Image" to save. Have fun!
