Layers weren't part of Gimp from the start but now it's the fundament. Technically layers are what you draw on. The so called images are just containers for the layers.
Curves,proper black and white conversion tool, 3D rendering and model support, seamless integration with other Adobe products, a slice tool and proper exporting for web.
Gimp has curves. I don't know about the black and white tool but I'm pretty sure you can use that too. Since the last release Gimp has a nice slice tool. I did noticed something it hasn't though. A good sphere filter! You can do the same in Gimp with lenses but it's more difficult. The nicest thing about Gimp is that you can write your own scripts and plug-ins. In other words; you can play with it all you like :)
What version ofm photoshop are you using? Personally I would find it quite painful to go through all of this again. However it is awesome that you are taking time to advance the medium. And inspire others to try and get involed.

It is Gimpshop.
But you need 2 computers to follow this course.
One to watch. One to work with the design software.

The New Layer button you refer to is the Copy Layer button ;)
