    :). It's so funny the things people do/ask. I make rum cake with Jamaican rum and people love it. One thing that gets to me is when they say 'the cake was so good, but when I ate it fro breakfast, it was as if I was drunk.'

    My response: That's because you were. It's called rum cake, not coffee cake. What part don't you get. :)

  • @badjujuwan I know! People think that any alcohol in food is automatically non-alcoholic. Unless it's cooked, it can still give you quite the buzz.

  • @thefightcommunity, you can easily use any other liquid in place of alcohol. Orange Juice would be a great replacement for non-alcoholics. Note if you use something non-alcohol or non-acidic, like milk, the perishability would increase, so you should freeze them if you plan on storing them

  • I'm only sixteen and sure asking my mother for rum may be a problem. Anyone have advice for a replacement from rum? I'm sure I could have it rum-free but with no nonalcoholic substitute, I feel it will be pointless as of comparing it to the brownie form. Any advice?

  • Where I come from (Denmark), this isn't really a christmas thing, its more of an all round year cake. But we never coat them in chocolate, we only sprinkle them, usually with chocolate sprinkles. Most people only use rum essence, but I really hate the ones you can get at most bakeries, because they have lumps in them and just taste like old cake :(

What I'm finding is 1) do small batches of chocolate 2) don't let the chocolate get too hot 3) be sure you put the paste in the freezer for plenty of time for them to firm 4) don't add too much liquor as it will make the paste too liquidy.

  • These turned out Amazing!

    -I used Chef John's chewy brownie recipe.

    -Stale brownies really are better. Think about it: the dryer they are, the more alcohol you can mix in before it becomes too wet.

    -Baileys Irish Cream was a great choice, in my option. The alcohol was there, and the flavor was divine (literally, I saw God).

    -Leaving the mix a little chunky gave a nice cookies-n-cream texture.

    -If you're making a lot, & want a smooth coating for every piece, don't melt all the chocolate at once.

    As a matter of fact, you can. I did anyway. I'm from Germany, and when I went shopping, I didn't find any brownies and I didn't have the time to bake some. I got a chocolate covered chocolate cake, cut of the coating (tasty :) ) and then just used the rest of the cake. It was less chocolaty than brownies, so I added a couple of spoons of cocoa powder to make up for the difference.

  • My cookie filling came out like cake frosting before putting them in the freezer. Is it suppose to be that soft? By the way, Baileys: The Original Irish Cream tasted amazing in this.

  • I just did these, and they turned out amazing, thanks for the inspiration. I am going to serve them at a friends party and I am excited to see what they think about them.

    A tip for those who put too much rum in and had too thin a dough (like I did on my first try yesterday): reserve 25% of the brownies and mix them in afterwards, so the dry piece will soak up the surplus.

    Oh, and you can freeze the dough in one piece and roll your balls later, which I think makes it easier.

  • Just made these, but by accident added too much rum and the mixture was way too thin, so I had a bag of shredded coconut in the cupboard and added that to thicken it, it turned out amazing, like chocolate macaroons with rum! Lol

  • I made these with 2 left over brownies (I hid them!) and 2 christmas cupcakes that I would have thrown out otherwise! I used Amaretto as the liqueur and had a mixture of 85% cocoa chocolate and a cheaper chocolate... it worked brilliantly and I got lots of requests for your recipe Chef John. We kept them in the fridge as they melt quickly and also away from children - as they are very boozy! Thank you for all the compliments you gave me by showing me how!

  • My supermarket was out of brownies (wow) so I used a block of commercial chocolate cake which worked just fine! I made a batch with rum as directed and I made another batch with mandarin liquor which was AWESOME. Next batch will be with bourbon, and then with limoncello.

  • @hoangtuso2 well, when i made my rum balls with vanilla, i thought that if i use the same amount of vanilla it would be too much... maybe... so i added little by little, just enough so they stay together and don't fall appart and still be a little moist :)

  • I just made them, it was a mess because I yielded to the temptation of putting too much rum into the brownie mixture. I couldn't really roll the rum balls up and then they sort of dissolved into the melted chocolate. Oh the frustration! All those yummy brownies! Will have to do em again.
