You can tap and hold to make it AE lock (lock the exposure) Just tap and hold until the focus reticle starts bouncing and you will see the words appear at the bottom of the screen. Once you have it locked you can recompose and focus on something else without it changing.

I've been guilty of doing a little tester here and there with the dslr, but rarely liked the results, no matter what program I used to merge the exposures.
I just got my 4S today and have been playing with it. I'm thinking of getting the Owle Bubo rig to play with new lenses and give me a better grip with less shake. Any thoughts on the Owle?

Nice video, but I am quite sure most people who have used the iPhone camera enough would probably know this. I use the iPod touch 4th Gen as a super mobile camera and it is very slim, so i personally grip the left side with my left hand (where the camera lens is) and I support the other side with my other hand then take the picture, if you see what I mean. Great video. :)
@henrikhansson1 I project, but the place is large and echos no matter what you do. When i get more stuff in there and some carpet it should echo less.

get the Camera+ app. You can control two points, one for exposure and one for focus. Much better app than the standard Camera app.

Talking about exposure, Samsung Galaxy S/S2 have better camera control than iPhone.
It let you to control exposure composition, so no worries about focusing on something bright.
Well, I don't want bring up Android vs iOS here.
HDR feature in iPhone is great though, I wish my galaxy s have that one.
In term of quality, iPhone's camera and Galaxy s's camera is nearly same.
(if I am not mistaken, they made in same factory)
