You are (unintentionally) misleading people. Tannins are a type of polyphenol found only in RED wine. (White wines have different types of phenols, not tannins). Tannins have the opposite effect to acid on the palate i.e tannins dry the mouth, whereas acids make the mouth water. Good tip about sucking air over the wine though, the extra air contact releases more aromas in the mouth and vastly increases our impression of flavour.

Wikipedia says "Tannic acid, a specific commercial form of tannin, is a polyphenol. Its weak acidity (pKa around 6) is due to the numerous phenol groups in the structure."

I'm agree with her information. However I'll just go for a remark on her way to hold the glass: It is not usefull nor elegant to touch the bowl with your fingers. You need to understand that leaving your fingerprints on a beatiful glass is not the best way to show how care abot the wine. Also, holding the glass by the bowl will change the temperature of the wine. In fact, you dont need to hold it like she does because there is the stem, and that's its fonction.
