Your social-interaction technique during your engagement shots are exactly like mine - and I have to add that it really does work. You get the most amazing photos this way and build that all-important familiarity between client and photography.

Most portrait shots are shot on Av or Aperture priority mode. Light meters are mostly used when flash units without TTL are used.
