in europe the favorite way to eat waffles is a light dusting of confectionar sugar, then whipped cream, topped off with whole strawberries and more confectionar sugar. so yummy!
in belgium, the home of waffles, they use very thick batter. it's actually more of a dough and has the consistancy of soft clay and they put little sugar crystals in the batter, so when you eat them you have these little sweet crunchy bits in there and the waffles are quite compact, almost like a chewy cookie.
So odd the French never eat this sort of thing for breakfast, yet right up in Belgium, plain waffles are an afternoon treat! Your batter from scratch is WAY fluffier than any mix could be, and additive free (one hopes!) If you have extras, dust them with confectioner's sugar and yours look so light, they can be like French "gauffres," which are a favorite 4 pm treat. Cooking from scratch can be REAL COMFORT FOOD. It makes such a difference! Meals seem more "real!"

I would say keep them REALLY SMALL because without the hot griddle controlling them, they will blow up like balls, but there IS a French breakfast pastry people sometimes take to work to share with coworkers (pastry seldom eaten in France for breakfast!) and I suspect it is a waffle-type batter they are made from. They are garnished with VERY COARSE SUGAR, looks like tiny hailstones. Not too much. Only really fresh ones are good, so you could be onto something!
