i'm not talking about fancy editing, i'm talking about the key change in the STUDIO version as the song reaches the last verse at about 1:36, this key change is NOT played live, does anyone know why they don't play this song like the studio version?

Because their playing it how it was written. They play every song just like their studio cuts just no fancy editing and effects.
