  • @CrazyRapzter ... I'm not from USA but.. that milk is condensed (concentrated) ... in my country this milk is in cans also.... so... just go to your local market and ask for it :)) I'm sure somebody will show it to you :)

  • Chef John, I have a problem. I thought everything was fine, but I'm having difficulty cutting it. I put it in the fridge overnight, hoping to firm it up. It wasn't firm, so I stuck it in the freezer for a while. I checked on it and it still wasn't firm. It's been in the freezer for over twelve hours and it's still very sticky. I doubled the recipe and put it in two containers, one plain, one with sea salt. Any tricks for firm fudge?

  • @eoiriseo It comes in a can at the supermarket. Over in the sugar, flour baking aisle. It's just evaporated milk. Its a white can with blue writing.

    There are many kinds of evaporated milk, not just carnation ( which is the brand).

  • It is IMPORTANT to use Carnation. I used Eagle brand, which is much thicker, and it did NOT work. Very granular. I could barely choke it down, but I did...

  • Turned it off after heating up the chocolate? I figured it would melt a lot easier if I kept it on. That said, one batch came out great and two came out horrible. I think I added too much butter. I found a recipe from yoyomax12 with sweetened milk that makes fudge much easier (and cheaper) though.

    If you had just a tiny bit of knowledge about this welfare-disease(is it a real english term?^^) calles diabetes mellitus type 2, you would know that, while obesity is a risk factor, too much sugar is not- as long as you do not gain too much weight

    In all honesty while stirring in the last of the marshmallows I had to put it over low heat for just a couple minutes so they could melt a little more.

  • And for everyone who asks this question: "John can I use white chocolate chips?" no you can't, white chocolate chips aren't real chocolate and they do not melt well. They become this rubbery oily mess.

  • @aDumbGorilla I use white Chocolate chip for fudge all the time, BUT I use the cook white chocolate melts that you buy in the better stores or candy shops, JUST LIKE I do for chocolate fudge. They work just like the chocolate ones..and they BOTH taste way better than the chips made for cookies. The stabilizers in those just make everything taste cheapo.

  • Do this without marshmallows (i am in Greece so...) and you will get a nice chocolate cream!!!!

    (added 2cups of chocolate bits and less sugar).

  • @dpchid Just add some into the pot while it's still hot, some of it is going to evaporate, it's not going to change the consistency of it much. Shouldn't need a lot to be able to taste it.

  • i made the fudge twice!! the first time it was soupy (got a lil crazy with the marshmallows lol) and didnt firm up the way i know it should have... and the second time it was firm and tasted good but was a lil gritty :( i gotta get this thing down!! any suggestions ya'll?

  • @varina56 You may not have dissolved the sugar all the way. Another possibility is that you got some water in your chocolate causing it to seize. Yet another is that you over heated the mixture. Be careful of these hazards and better luck in the future.

  • I followed this recipe exactly, but instead used a maple flavour instead of chocolate, because I like maple fudge, and it was in the fridge over night and it didnt set. What happened? Can someone explain to me why it didnt work?

  • @ShrivyShrivey temperature is everything with fudge. Theres an important chemical reaction which happens between the sugar and fat which lets it set later.

    Basically the cooking of the fudge is done entirely between 0:51 and 0:56 .... This is the tricky bit of the recipe and its described very badly here.

    I'd advise finding a recipe that describes this stage in depth as cooking fudge is tricky and your experience isn't uncommon.
