The Sega CD port of MK 1 and the Saturn Port of MK II would've been the definitvie ports of the game had it not been for one thing: the near constant LOAD TIMES

You have it backwards. The Saturn version is an enhanced port of the PS1 version. It came out after the PS1 version, and they decreased the load times on the Saturn version.
I prefer the Saturn version for the big characters, sounds, and the easier AI.
One thing I noted was that in the Arcade version, Shang Tsung's winpose was merely him standing with his hands on hips, his laughing animation only appearing in the credits. The Mega Drive and Saturn version had the laughter intact. Strange, huh.

They should have done a Mega CD version, with sound like the MK1 game. Ive got the Megadrive MK2 and theres one thing that disappionts me- Scorpion just says 'come ere' not 'get over here' as well, I noticed he does on the arcade version. By the way the Master System graphics are great, imagine a NES version!
I have another info bit: The Japanese version had the subtitel "Kyuukyoku Shiknken". I know "Shinken" either means "Seriousness" or if you're going by FOTNS, "god fist" but I don't know what kyuukyoku means. What do you think the full title translates too?

You are too harsh on 32x MK2 , that game pushed the device to its limits.
The 32x version is widely considered one of the best MK2 home ports alongside the ms-dos/SNES versions.

i think the genesis version was very rushed. If you look at mk3 and umk3 genesis it was twice the size of mk2 and it was MUCH better...

Say that both players are Johnny Cage. In most versions, Player 1 is blue and Player 2 is red.
Why is it that on the Super Nintendo version, Player 1 is red and Player 2 is blue?

Only Liu Kang had an Animality in MK2, but it was just called a Fatality.
