Very nice, well done :). But as most of Ukrainians I prefer it with potatoes and yeah meet9not chicken). But I think that's an attractive alternative for vegetarians. At 1st it seemed like there was a bit too much veggies but it's vegetarian:). Very nice, But I think cabbage is an essential part of borsch, maybe you cold integrate it into your recipe and it will become a second version of vegetarian dish
Great idea, I would have never thought of using beet to make soup. I keep waiting for the day when you'll pop around the corner in a manner of Russel Brand going crikey, blimey, bollbags - you know, all dressed in black:-)
Ethical vegans watch out --> apple cider may not be vegan if the apple juice was filtered using isinglass (fish gelatine) or egg white.
