  • Very fun and entertaining - and as it looks delicious, I guess I'll have to make this now. Also, I have watched a ton of cooking videos and NO ONE has mentioned before your incredibly great tip of squeezing the water from spinach using a second plate on top. So thanks for that, and for the video:)

  • The other Titli thing I tried this week - Warning!!!! It's nice warm but impossible to stop eating when it's cold. Definitely in our household repertoire now - yummy.

  • One thing to add - I made a second one as the first one was so good. The second one was nice but not quite as nice as the first. The only difference was that I got distracted whilst making the first one and it had to sit in the fridge overnight before going into the oven the next day. I wonder if this helped the taste — has anyone else any experience of this?

  • The Northwest of Greece(Epirus Region) have the Best pies ....Never we cook the spinach...And the onions are fresh green plus half cup of rice for the pie's liquids and and with olive oil we mix with our hands all of them...

  • @MrGrizmint Dear Greek Boy. What does it say in the title? Most people just call it Spanakopita and I should know because I have a lot of Greek friends who are 100% Greek and they told me so.

  • @bananasavi Technically this is spanakotiropita (tiro=cheese) but most people just call it spanakopita

  • @TitliNihaan Oh, I thought the difference had something to do with the shape. The spanakopita I've had (before I made yours, and it was delicious, by the way!) were little triangles like dumplings. I didn't know until I saw your video that you could make it as a pie.

    In english : Spanakotiropita is same thing with much more feta cheese. Skapankopitta can also be without any Cheese. Tyropitta = Cheese pie.. Tyri = Cheese. .. Spanakotyropitta = spanakopita with cheese in it.

    But not any cheese will do. . It needs to be FETA.

  • @DRwolfinstien Thanks. There are people in this world who can't cope with the idea of "different" - different faith, different lifestyle, different recipe, whatever. Somehow it threatens them and therefore they lash out.

If Titli said "Hello" its no different? as Hello is an English greeting..., so from now on you say when Titli cooks her food to share with us, if she cooks Pancakes USA style she should say "Howdy", or if she makes Boeuf Bourguignon she should greet us with a "Bonjour!"... the list is pretty much endless, to make it a touch personal she is sticking to her muslim faith and using its language! whats wrong in that?

  • Hello Titli :) As far as I know cheese is always in the pie unless you make it for the easter fast it's just plain without it! I love your videos and just adore eastern spicy food :D P.s. I've never seen mom add dill but then again a recipe can be totally different from one town to the other :/

  • I love spanakopita,however my mother doesn't add onions to the stuffing and I think it's better,because that way the onions don't "argue" with the spinach :) just my opinion though. And I love it with some yoghurt and soy sauce on top (I know it's weird,but give it a try,you'll love it ) :)

  • Titli, with these kind of preparations I often end up with a pie that's very moist on the underside while yours and some others I ate in resturants are not.

  • @Shannariano Could be something to do with how much water you squeezed out of the spinach. If your spinach is too soggy you m,ay end up with a soggy bottom!

  • @tileb Just defrost the spinach and squeeze out the water. Then use as if you had already blanched the fresh spinach.

  • Do you use open-ended spanners or just ring spanners? And metric or imperial? I appreciate it''s a bit of wrench, and, anyway, is that all just a load of 'torque' ... but seriously, this recipe looks very enticing. AND, I've found a local store that stocks frozen filo pastry. Oh Yes! Spinach, feta, onions, and a 12mm socket set, Mmmm!

  • @belgobabe I got the last lot at Carrefour in Ferney in the halal fridge section. BTW, is it me or do the shelves at Intermarche in Bellegrade look a little emptier these days?

  • @TitliNihaan Hmmm. Guess that suggests you can't get it in Bellegarde? Shopping should *not* be this difficult, sigh. Not 100% sure about Intermarche. I'm less than impressed with its produce section but got a beee-yooo-ti-ful piece of salmon there over the weekend. The shelves looked well-stocked to me; maybe you were there on an off day?

  • @belgobabe I got my first filo / brick at Leader Price when I moved to France. Otherwise Auchan (at least in Bordeaux) has a great Halal section.

  • I remember the day my mother and our Greek neighbor made their own philo! They used broom sticks, and it took most of the day! Our oven was larger than Kiki's, and the only one that would fit the "pita pans", (which made great word play to our 5-year-old ears: "Peter Pan"!)

    It was half for pita, half for baklava.... and this was more than 50 years ago, before we could get frozen philo, so consequently, a RARE treat!

  • just a suggestion here, in greece we sweat the onions in lots of olive oil and spinach too. we add more philo pastry layers. If its diff to find philo , we are using puff pastry. lots of love from greece !!!

  • @baboukis1 Thanks for the suggestion! Do you use spring onions or "regular" onions? I find that spring onions work well without sweating.

  • @TitliNihaan : My mother used a bit of both spring and white onion, sweat them in olive oil and then the spinach. we dont boil it , because it becames so so watery. I loved your draining part is jenious !!!! lool,

    also as a tradition we kneat the philo homemade.= χειροποιητο φυλλο πιτας for your google searches.
