The only problem with blender's fluid simulation is that the particles lack calculations for cohesion, adhesion, and absorption, sadly i haven't found any simulators which can do this :(

You can give Blender water almost any look you want under the Materials tab. For clear water Select Object > Material > Transparency > Ray trace > Alpha > less than 1. There is lots of settings to play around with and it will take a few tries to get what you want.

It is easy:

1. Make cube(domain) set resolution and time,

2. Make smaller(in z axis) and bigger (x,y axis) as a fluid with default settings

3. Make model for example Human(can add armature and posing it)and animating his location(down to up, it should be in domain area)and setting it as a control (attraction and velocity 0.2- 0.2)Quality: if you want you can set more

4. set long animation (100 frames is good)

5 Bake
