Hello Najat, I really loved all of your recipes!!! I tried the recipe for Namoura ( it's was the best Noumura I have ever tried) and now I'm about to try the recipe for Mamoul!! But before I start it I would like to ask you to tell me how big exactly is your cup (the one you use to measure the semolina). Thanks:)
I use the universal measuring cups ,they come in different sizes and they are used for dry ingredients and I use the glass measuring cup for the liquid ingredients ,if you want to go by weight,the cup of semolna is about 180 grams. I will post a chocolate cake recipe very soon, I will explain in the video how to measure everything for baking needs.

you can prepare it using orange blossom water as per the pistachio filling or you can use powdered sugar with some cinnamon and nutmeg.it is completely up to you.
Hi, one more question: what would happen if I placed the mamouls in a wilton mini detailed cavity pan for the design and baked them in the pan. Would it work and save time than molding each mamoul individually?
Hi, I saw Manal Al-Alam's mamoul recipe. She used a stand mixer instead of manually. What do you think about that? Can I try your recipe but use the stand mixer method. Will it make a difference? Thanks.

@2221971 I'd rather eat unhealthy mamoul than a healthy one::) I just work out extra that day when I eat it because it's goooooooooooooooood. walk an extra mile and you are good to go to eat more.............
I totally agree with what you said,all desserts must be eaten in moderation and this is what I do:when I crave something sweet,I count my calories that day and make sure that I don't exceed the daily recommended number of calories for me to keep a healthy weight.

@najatskitchen I did use cream of wheat, but it didn't hold itself. I had to keep adding flour until it became manageble! At the end, it was like 3 cups of smeed kheshen & 1.5 cups flour. They tasted very good actually.

Salaam, I would like to make mamoul for the upcoming Eid. I was hoping you can explain why there are so many differences out there. Specifically with the smeed/flour ratio. Why do some call for more flour than smeed and vice versa? Also, some recipes melt butter or shortening (or combination of) where yours is just soften butter no shortening and rub together. What is the difference? Hope I can get a response soon as I would have to prepare this tomorrow to be ready for the Eid on Friday.
@PaliGirl71 From my experience, some kinds of smeed, especially the kheshen kind, is very difficult to manage, so you have to add more flour to make it hold itself. Najat used smeed na3em so she didn't add lots of flour I guess. As for the butter/oil part of your question. Some people don't like to use saturated fats like butter! My mother makes double the recipe Najat made, so she uses one cup of butter and one cup of corn oil which is unsaturated fat and thus healthier. So its just preferance
Hi I made these and they tasted so good,the only problem is that they kinda came out dry,I did as u said as soon as I took them out of the oven I put them into a container and covered them,maybe I need more water in the mix?I don't know what went wrong
The flour has different humidity from pack to pack,you need to adjust the water or milk quantity accordingly.You have to let them cool completely before storing them,or they might got mold.
Ok,Almost everytime when people make cookies or cake or anything sweet,they put like one third or one fourth of a tee spoon salt in it.Why are they doing that when you never can taste that small amount of salt?

Hi Graibi recipe: 1 1/2 cups samneh 2 cups all purpose flour 1 cup powdered sugar 1/2 teaspoon vanilla extract nuts for garnish directions:-heat the oven to 350 F -sift flour and suger -add samneh and rub between your palms as in mamoul,don't knead -shape it as you like bake in the most upper rack of the oven for about 5 minutes -leave them to cool in the baking sheet and enjoy

Mahleb is a spice with a distinct flavor ,it is the ground pit of cherries.If you can't find it in middle eastern stores near you ,you can buy it online too.

I think that these mini cavity pans are thick and made for cake recipes.Mamoul shouldn't be as thick as a cake or a cup cake.

Mamoul can't be healthy lol
even if you use whole wheat flower , it won't taste the same. You can't use oat, as far as I know.

thank you. The recipe is perfect. it is the same one my mom gave me. We used it for generations.
I used dates with cinnamon and Cardamom. It was very delicious.
I recommend the oven to be pre-heated to 350 or a bit lower. 400 was a bit high in my case, however, It depends on your oven though.

اما السميد فكوب منه يساوي تقريبا 180 غم

yes ,if you toast the mehleb first,it would give you a nicer flavour than if you don't,but be careful because it won't take long to toast
For the mystic,grind it directly it doesn't need toasting
