Making Gringoire the narrator was a stroke of genius. He really is a great character, but doesn't have a big enough part in the book. Him as the narrator really gives him a better chance to stand out, plus it makes sense, considering the time the play takes place.

In the original novel, it was translated into English as the FEAST of Fools. It's meant as a satire of the FEAST days that certain saints have. Obviously, those days were not for eating the saints, but to celebrate them. It's the same deal here. Any cannibalistic undertones are imagined, and mean missing the point all-together.
