Mustard greens are different than Kale which is a form of cabbage, green or purple, and the central leaves do not form a head. For this dish, I use green kale. I hope you give it a try and it is very easy to find in the grocery stores. Happy cooking!
It's a little irritating to see these inferences in the comments that if you don't cook something their way then it's not done right. Bull. Some people like their kale barely cooked & bright, more power to them, I don't. I'm going to cook my kale however the heck I want to, and I like mine soft. Thanks to the OP, though, for posting the seasoning ideas!
It looks good, but I really hate the taste and smell of garlic (just can never get passed that). I wonder if it would still be good leaving out the garlic.
I eat my kale raw, it almost single-handedly gets rid of my IBS, which is obviously due to lack of roughage. I used to juice everything, but then I figured, the juicer costs around $100 (or more), it strips the skin off everything which you lose alot of nutrients there, I used to juice apples because I can't stomach the skins, now I just peel them and I'm fine. Raw kale taste sucks, but you wash it down with lots of water, and it's not as bad as chemotherapy if you think about it.
@jenishak some nutrients are lost but not all; also by consuming more volume you get fiber and nutritional benefits. You can cook less but then the kale is bitter and you may be less likely to eat it.

Looks terrific. I grow my own kale. I suppose I can do this with Tuscan Kale...it looks a bit denser than the kale you're using.

You could leave out the garlic. Instead, you can use nuts like peanuts, walnuts, pine nuts, or your preferred nut. Hope this helps!

Thank you...I bought kale today and tried kale chips...not bad, but not good either, I still have Kale left over and will try this tommorow =)

Not sure about cooking the kale so long, most nutrients are lost this way

@jenishak I cook my kale for a very short period of time...so it's still bright green, crisp and a bit chewy. This looks good too..... I crave kale!
