Seems the easiest to follow, and than possibly chicken and chicken broth.
I have a 16 quart Presto canner with just a weight -- a little rubber stopper to remove for water bath and an air vent lock on the lid. I've done water baths just fine, but this is only the second time I've tried pressure processing. Steam just kept coming out of the air vent. The burner was on high, then I turned it down to about 7. The weight never rocked.

I allowed it to go for 45 min and all jars sealed but one. Is the chili still good, or should I transfer it into containers and freeze instead? Thank you.
@meadowlassie Without knowing a few other bits of information it's hard to tell you whether it's still good. What size is your canner, what temp did you have the stove on and do you have a dial guage or just a weight? If you have a dial and you kept it the correct pressure for your altitude then they are fine. Blessings!
Could you do a video showing how to can meat? I've been canning two years now but have only done tomato products and pickles. I'd love to learn how to can meat because I'm planning on keeping rabbits for that purpose.

She had in the 10 seconds I turned my back- ran and grabbed a piece of bacon from one side of the counter and ran back to the other side and I never thought she moved!! whats shelf life , on average on canned meat? that chicken broth looked real dark. How did you make it? next rain day, planning on cannin 28# of sausage/ground beef mix meat balls. Guess it would be ok to use tomotoe sauce in the processing? thanks.
@stealinator I believe it's 2 years but I have eatten pork and chicken that was canned for 15 year stored in a shed in California. If the seals are good then the food is good. For broth just put some carrots and onion in with chicken breast and cook about 5 hours. Debone chicken and continue to boil the bones, skin,carrots and onions for another 2 hours. Yes tomato sauce is fine just remember to brown your meatballs they will keep their shape and not stick together when pressure canned.
But, how can you be mad at them momma? It's not their fault. That corned beef was mocking them and told them that they couldn't possibly get the lid off of them. So, they were just showing those jars what they were made of. : ) Its always hard for me to get mad at my girls (we call the people girls boys) I cannot tell you how many pairs of shoes they have collectively eaten as puppies.
I'm sorry but I just had to laugh about the dogs. I have cats but that is something I can see them doing too. I just bought 100lbs of ground beef that I have now got to can. Not sure how I am going to keep these kittys out of it.
@SurvivalFoodGourmet You know when your doing alot of ground beef you should just boil it your processing it in water anyways. Turns out really good and oh so much easier. That's how I do mine most of the time.
