Language does migrate in the brain as it's assimilated. But, I'd guess that the real reason his language and manneisms are perfect, is that the part of his brain governing those skills were untouched by the illness.

I really like to apologize if I am wrong but I think this is completely fake and more of a short documentary based on the movie Memento than a short term memory man.

If this is real, why is he not asking about the camera man following them like a snake. Plus people with amnesia are vulnerable and therefore unsecured and curious to know who the cameraman is. He would be asking the cameramen questions such as who are you? why are you here?

If I am wrong then I hope he gets his memory back.

You should look up 'Clive Wearing's diaries', they're really interesting.
