Also, he said you don't want the metal falling on to the meat. Yet, he doesn't wipe off the blade (which is FULL of metal particles) after he sharpened it, so he didn't make much of a difference.
@homemadealcoholstove and even if it did, it wouldn't matter if he didn't do it over the loin. If in fact some metal would get filed of he should have wiped it of before cutting. It´s true that steeling only realigns the edge. But there will always be some metal flakes that comes loose. Either way I like Alton brown too. =)

Actually, metal is removed from the blade. The steel is magnetic when rubbed on other steel (the knife blade) and picks up chipped metal from the blade.
Well, he explored the cheese steak a bit further I guess. I mean you can do what ever you want to a cheese steak as long as there's still cheese and a steak. I even put hot pepper in mine.
@goncack he was on the original iron chef in japan and defeated the japanese iron chef ( i forget his name) in battle of the grill gods, he would crush bobby flay. i like flay, but he does the same thing on every iron chef battle, all his plates are the same, the secret ingredient with 3-4 sauces.

thats not sharpening OR honing...
thats something called "steeling" in which the knife steel realigns the edge

I tried doing that oiling thing with the onion. The aroma was great, but I think I burnt it off too quickly.
