  • I like the reenactment, it is kinda weird and funny. Whole wheat muffins seem to be an old dish but it's good.

  • Mark, this is great! As for your note about the "chemistry," what's a good what to figure out how much baking soda/baking powder you need? You had this great episode awhile ago where you nicely laid out a framework for how to make a decent cocktail. It would be great if you ever wanted to do something similar with a "The Minimalist bakes" episode, where you gave some rules of thumb for how to figure out the chemistry that goes into baking. Currently, it is a black art to me.

  • The recipe on the NYT website calls for one egg, and you can see it in the bowl briefly when he starts to pour in the butter. I made these tonight with non-fat yogurt instead of buttermilk, and used regular whole wheat flower (couldn't find the pastry version), and these are some seriously good muffins. Could use maybe a bit more banana next time, though, as the wheat masked the banana flavor a little.

  • I live in Madison, WI. So surprised to hear him say our city's name! Haha, makes me want to go to our local bakeries.
