Mark, this is great! As for your note about the "chemistry," what's a good what to figure out how much baking soda/baking powder you need? You had this great episode awhile ago where you nicely laid out a framework for how to make a decent cocktail. It would be great if you ever wanted to do something similar with a "The Minimalist bakes" episode, where you gave some rules of thumb for how to figure out the chemistry that goes into baking. Currently, it is a black art to me.
The recipe on the NYT website calls for one egg, and you can see it in the bowl briefly when he starts to pour in the butter. I made these tonight with non-fat yogurt instead of buttermilk, and used regular whole wheat flower (couldn't find the pastry version), and these are some seriously good muffins. Could use maybe a bit more banana next time, though, as the wheat masked the banana flavor a little.
I like the reenactment, it is kinda weird and funny. Whole wheat muffins seem to be an old dish but it's good.
