The Encyclopedia joke seems very dated. It is my understanding that, because of how readily available the Internet is, very few people buy them these days.
From what I heard: Heather, John, Brian, Lisa, and Cheryl are all the names of Jim Henson's children. Polly and Kate are the names of Jon Stone's (one of the co-creator's) children.

Actually from what I read on Muppet Wiki, Polly is a reference to Polly Smith, and Kate is a reference to Kathy Mullen.

The inside jokes are Heather, John, Brian, Lisa, Cheryl, and Paul Henson. Jim Henson's kids and brother. I don't know about Kate though.
