There are a variety of engine options that have different fuel consumptions but to get the lowest fuel consumption for a 1680 I would suggest getting the Cat C 6.6, 250 hp engine which gets approximately 7.8 GPH (Gallons Per Hour) and that's under max load, but you still have to consider that it also depends on the type of material your putting through the machine, and how well you maintain the machine.
