Isn't your technique of "roasting" the garlic more accurately deep-frying, granted, at a rather lower temperature than usual?
To me this is in line with people who refer to pan-frying as "sauteeing" because it sounds "healthier."

You should check out our howto on "Yukon Gold Mashed Potatoes"! We use a ricer to get the potatoes extra creamy and they don't get all gluey!
