@Crypticx666 Right now I'm running a batch of the cider and a cran-grape thing just to experiment. I followed your recommendations on sugar and added a premium cuvee yeast to see if I could get a higher alcohol yield. It's been sitting for a week and just yesterday they both stopped bubbling. Does that mean it's ready or should I continue to let it sit?
@RagingReaper101 well if it's done bubbling, like less than once a min, it's time to rack into a new vessel to get it off that yeast bed. let it sit again until its clear whether that be a week, 2, 3... until it's clear, then bottle it, or keg it, or naturally carb it, what ever you want to do with it.
On a small note you should try adding a strong tea, I did this on mine, apparently it adds Tanin which is good for cider as cider normally has Bramley apples in which apple juice doesn't so gives it more flavor variety.
@CopingWithTheTimes I use a Lalvin EC-1118 champagne yeast. It's great for sparkling wines, fruit wines and ciders. Has a high alcohol tolerance, up to 18%! I'll let it go for two weeks in carboy, or until i see no more bubbling then i'll rack it into another carboy and let it clear, then i'll bottle it.

@CopingWithTheTimes Yeah just one little square 5g package. I think that's what they weigh. It don't really matter if you use too much, they multiply anyway, better too much then too little.
@CopingWithTheTimes Oh and I use the whole package of yeast. I didn't do a starter or anything so wanted to get the yeast number up as quick as possible!
Cant say i would drink your cider because im a bit of a cider snob it has to be fresh apple juice pressed on the day of yeast pitching sorry im an english farmer so. But hope you enjoy your cider + where is that bio fermenter you said you would be showing us???????????????

I've made this cider once before and it wasn't too bad at all. Fresh is always better though!

@DevonHomeBrew Ahhh ok. I still haven't got it running yet. I need special power supply that isn't conventional in a house so as of now, it's still not in operation. I hope to get it up and running soon but it's a slow process.
Do you have a full PDF or something of what to do and how to do it?
Also, is there variations in measurements? Like say I only have a 3 gallon carboy, would I need to throw in 2/3 or 3/4 of the yeast into it?
