  • One question, the lemon filling, does it need to be hot when it goes inn to the pie? because mine was almost cold when I put it in, and when it came out of the oven, it was all soggy and drippy, how can I avoid that?

    In the description, can you specify on the measuring units? I got a bit confused when you wrote teaspoons and then tbs, so is it tbs, and then Tbs, or just both tbs?? (from norway you see). The pie crust was delicious (I've made pie once before, and it was far from edible).

  • I prefer lemon meringue with a crushed biscuit base instead of the pastry. tastier. EASIER.

  • Niiiceee. You know lol, if you're worried about "scrambled lemon meringue pie", you can whisk the eggs first in a bowl, then add half of the lemon filling to the whisked eggs, whisk some more, and pour it with the rest of the lemon filling ;)

  • After the pastry cook for 20 mins, turn the oven down to 190 degrees or 180 degrees?

  • Those with issues with meringue, do it the old school way.

    whisk the egg whites with a hand whisk until it sticks to the bowl when you turn it upside down. then add sugar, whisk some more, add sugar whisk some more until all the sugar is in there.

    It's slower than using any mixer or machine and it'll tire your arm, but you make perfect fluffy meringue every time.

    Great recipe, instructions, video though.

  • For those asking, castor sugar is pulverized white sugar. The granules are much smaller and dissolve more quickly in the egg whites. As a note, I did this recipe with icing sugar and a 1/2 tsp of cream of tartar to help keep the whites standing up.

    For your meringue to work, you can't have ANY yolks or shell parts in them. Plus your bowl should be grease/oil free. Glass and metal are preferred as plastic holds oil. Clean your bowl with boiling water to make sure is grease free.

    Im not sure but maybe its because i preheated it.

    another problem is about the meringue, which I failed to whisk up.

    possibly is that i mixed it with a little bit of yolk (for my poor separation skill of egg)

    and I added the sugar too soon.

    duh, i guess the crust is fine and the filling is fine. I added a little brown sugar on top and baked it for the last five minutes to give it a better look. LOL

  • you didn't specify how much butter to use in the crust or the lemon filling and you did not specify how much sugar to add to the meringue. Also, you did not specify which size pan to use. Do you have this information?

  • How I cook a pie crust, is I have and extra aluminin pie tin and I put it on top of pie crust and bake the whole thing upside down, so as the wieght from the gravity will prevent air pockets.

    My lemon sauce boiled and became TOO thick but I don't know why because I did everything right!! I just used corn starch instead and put in the sugar and water first :/ help!!

  • I tried this and it was my first try of cooking a pie ever, and it tasted SO DELICIOUS! But leaving my pie out or in the fridge, there was lots of water underneath it, making the pie become soft/runny.. wondering what I did wrong..

  • mlh1994 caster sugar is coarser than icing sugar but d particles are smaller than normal coarse sugar.can normally buy in supermarket or grocery stores.

  • @kaexo potato starch works as well infact its better you can make your own by sqeezing out water of grated potatoes and letting that sit for a while you´ll notice something white at the bottom theres your potato starch but youĺl use too many potatoes so just buy it in the store:D

    Regarding the meringue, you should try a double boiler meringue recipe using superfine sugar... the result? shiny, stiff peaks :)

    Cornflour is what we (US) call cornstarch. You'll also need flour.
