One question, the lemon filling, does it need to be hot when it goes inn to the pie? because mine was almost cold when I put it in, and when it came out of the oven, it was all soggy and drippy, how can I avoid that?
In the description, can you specify on the measuring units? I got a bit confused when you wrote teaspoons and then tbs, so is it tbs, and then Tbs, or just both tbs?? (from norway you see). The pie crust was delicious (I've made pie once before, and it was far from edible).
Niiiceee. You know lol, if you're worried about "scrambled lemon meringue pie", you can whisk the eggs first in a bowl, then add half of the lemon filling to the whisked eggs, whisk some more, and pour it with the rest of the lemon filling ;)
Those with issues with meringue, do it the old school way.
whisk the egg whites with a hand whisk until it sticks to the bowl when you turn it upside down. then add sugar, whisk some more, add sugar whisk some more until all the sugar is in there.
It's slower than using any mixer or machine and it'll tire your arm, but you make perfect fluffy meringue every time.
For those asking, castor sugar is pulverized white sugar. The granules are much smaller and dissolve more quickly in the egg whites. As a note, I did this recipe with icing sugar and a 1/2 tsp of cream of tartar to help keep the whites standing up.
For your meringue to work, you can't have ANY yolks or shell parts in them. Plus your bowl should be grease/oil free. Glass and metal are preferred as plastic holds oil. Clean your bowl with boiling water to make sure is grease free.
the kitchen paper of mine just literally burned in the oven......
Im not sure but maybe its because i preheated it.
another problem is about the meringue, which I failed to whisk up.
possibly is that i mixed it with a little bit of yolk (for my poor separation skill of egg)
and I added the sugar too soon.
duh, i guess the crust is fine and the filling is fine. I added a little brown sugar on top and baked it for the last five minutes to give it a better look. LOL
you didn't specify how much butter to use in the crust or the lemon filling and you did not specify how much sugar to add to the meringue. Also, you did not specify which size pan to use. Do you have this information?
I made this last night and it was absolutely delicious. My whole family loved it and they sure made short work of it. I have a request for another one asap. Thanks so much for posting this recipe ... oh and my family and friends say thank you too :)
I followed the instructions but it doesn't work :'( the filling is wayyy to thick, and sour. The crust issss soooooo hard to manage XD cos its so soft, it breaks before i manage to put it on the pan. And the meringue isn't as thick as yours :/ Any suggestions how to make it better?
i wish nico could crawl thought the computer into my bedroom his food looks so deliscious. i could whip up his meringue and use it for topping. why in the hell would nurses need corn flour for?some kinky powdered wig orgy i supose. all naked and floured up. he has those chubby fingers. ever shake hands with a bloke with chubby fingers. its like grabbing a penis

Hi, I was wondering how much butter is used for the pastry and lemon filling and I was also wandering how many ozs are in the ‘cups’ I’m English I haven’t a clue (: I want to do this recipe for my 4 recipe Cooking exam at school in a few months because it looks and tastes great which is overall what they are looking for but I don’t understand the ‘1 and a half cup’ measurements and can’t afford to guess. Could you get back to me? It would be appreciated (:
@kaexo it's corn starch, the only thing that's going to make that congeal like it needs to... breadcrumbs greenpeter63? that would make the nastiest fucking pie ever
@kaexo potato starch works as well infact its better you can make your own by sqeezing out water of grated potatoes and letting that sit for a while you´ll notice something white at the bottom theres your potato starch but youĺl use too many potatoes so just buy it in the store:D
I would love to make this at home,, since where I live there is not one pastery/cake shop that makes pies...Unless Niko you'd move here..you'd be a billionaire! My only dilemma, is cornflour same as cornstarch? I'm very confused from cooking sites, no one is giving a clear answer. Since you're the cook, and this is your recipe, would you please tell me? So that I'd get to making this asap...that close-up makes my mouth water! Thank You!
wow, I followed your instructions to make the filling because the last time I tried with a different recipe It was slippery and didn't look very nice, and this was PERFECT!
Regarding the meringue, you should try a double boiler meringue recipe using superfine sugar... the result? shiny, stiff peaks :)
i bought lemon pie and the taste exactly like "shit", that's why i wanna make one by myself
