  • @FIREBIRD69AU: No. Microwave energy heats by wiggling water molecules in the food. It doesn't "kill off all the vitamins and nutrients." Search for "microwave nutrients" and read some of the credible resources such as Harvard Med School.

    The vacuum bags and ziploc bags have no BPA.

  • Microwaving kills off all the vitamins and nutrients because the radiation changes the chemical/molecular structure of the food, also under extreme temps the BPA (Bisphenol-A) and other possible carcinogenic chemicals can leech out of the plastic bag and penetrate into the food , i know it's a very convenient,lazy,quick & easy cooking method but very dangerous unless the cryovac vacuum cooking bags are certified/rated as "food safe".Buy a PRESSURE COOKER instead,it's safer & proven successful !

  • Faux Sous Vide

  • Yes sous vide means literally under vacuum but the cooking method expects it to be done in a temperature controlled water bath to guarantee proper cooking - you can still get uneven cooking and OVERcooking doing it this stupid way in a MW even though you've vacu-sealed the food - this is a useless video

  • I have experimented with sous vide cooking for several years, starting with a cheap bag sealer, crock pot and thermometer, moving to an entry level chamber vac and electronic temp controller. If you are a talented home cook, it's well worth looking into. It can take you to the next level, and you will amaze your guests.

    I have never used my microwave this way, but I have some fresh-picked carrots and beans in the fridge..

    As a culinary student I am grateful for Chef's advice.

  • Well I guess you can say it wasn't "staged"! I think you need to show what real sous vide is like! I'm a passionate sous vider from silicon valley and I've seen your other sous vide videos (turkey) and they are better at explaining sous vide.

  • This is probably the WORST way you could sous vide cook something. You would be better off dropping it in boiling water. There is no need for a microwave. He also had an immersion circulator in there... Why wasn't he using that? The circulator is the most precise and delicate way to sous vide cook.

  • @brybert84 well for someone who doesnt have an immersion circulator this way works fine, but in his circumstance, lol yea this was the worst way he coulda done it

  • @brybert84 "$1200 piece of equipment." It seemed that he was explaining it for the average consumer. Also, there was a graphic for using a zip-lock bag if you don't own a vacuum machine.

  • @boobtbam: uhm, no. A vacuum isn't the absence of "anything", it's the absence of air. Obviously, a vacuum-sealed bag of vegetables contains something.

  • Can't believe with all the conflicting information about plastics in the microwave, this technique is promoted on You tube. The latest info is NOT to use ANY plastic in the microwave or oven. Do I need proof in the way of seeing if I have a stroke or die before listening to this ? No. Why would you even do this if there is one scientist out there who says heated plastic can release BPA's or anything else that can be neurologically damaging? Young moms throw out the plastic baby bottles!

  • "Vide" actually doesn't mean vaccuum, it means empty in French. So when you say, something is sous-vide, it means that it has been emptied out of air.
