Microwaving kills off all the vitamins and nutrients because the radiation changes the chemical/molecular structure of the food, also under extreme temps the BPA (Bisphenol-A) and other possible carcinogenic chemicals can leech out of the plastic bag and penetrate into the food , i know it's a very convenient,lazy,quick & easy cooking method but very dangerous unless the cryovac vacuum cooking bags are certified/rated as "food safe".Buy a PRESSURE COOKER instead,it's safer & proven successful !

This is probably the WORST way you could sous vide cook something. You would be better off dropping it in boiling water. There is no need for a microwave. He also had an immersion circulator in there... Why wasn't he using that? The circulator is the most precise and delicate way to sous vide cook.

Do I need proof in the way of seeing if I have a stroke or die before listening to this ? No. Why would you even do this if there is one scientist out there who says heated plastic can release BPA's or anything else that can be neurologically damaging? "Vide" actually doesn't mean vaccuum, it means empty in French. So when you say, something is sous-vide, it means that it has been emptied out of air.
