They're both thumb roll overs. The former's usually called the Y2K rollover, and the latter is usually called the zen rollover. Basically, it's a vertical thumb rollover, and then a horizontal.

That said, most flippers start off with a trainer knife which is a completely dulled instrument with nothing but a curve or some other marking to indicate the sharp side of the blade. So after practicing with that about a bazilion times, you'll never cut yourself doing the same trick with a legit knife. If you have no trainer, you can just wrap the bade in scotch tape instead.
