I heard a theory recently that once you cut out the treats, the dog will only perform about three times before he realizes he will not get a treat. The dog then gets sloppy and loses the drive.
@CrueLoaf not true at all. Check out the channel musicofnote1 and find the film "Dog Myth Nr. 1: Clicker Trained Dogs Only "Work" for Treats". The first three minutes or so show the dog working for no treats food treats at all. 3 minutes long! Then you can see how these same behaviors were taught using food rewards and fading them.
It's a good way to start, especially for ordinary people who aren't skilled at reading a dog or providing appropriate positive reinforcement techniques that a dog would understand. If you're worried the dog will become overweight, you take the food rewards out of the dog's daily food allocation, so no real harm done. Later, the food lure is removed, and then reward is replaced with something fun and familiar to the dog - a favourite toy for instance. (eg: see quantum leap 3)
@notagumshoe He talks down to people for one. He acts like his Berkley degree makes him better then all other trainers. I take shelter dogs, so I need to see how to fix broken animals not see how he works 3 already trained dogs.

@jam1037 I don't think he talks down to people. When I met him he was very charming and polite to his audience. He was certainly polite to me.
