I would love to see one of those extra flexible modules turned into a wearable GPS unit with the screen unwinding from a tubular receiver/computer/gps unit. I already use the kindle to archive maps while hiking. Something that snap rolls out of the way would be amazing.
It uses no power after it displays an image and is flexible. It also a reflective display so it looks more like a piece of paper rather than a monitor.

e-ink also uses much less energy than an LCD screen or a plasma screen thus making it green.
