Here's something interesting. This could be compared to Mario getting all high off of something. The first few circuits are all realistic, and boring. When Mario gets slightly high, the circuits get a little unreal. Rainbow Road would represent him completely dazed, which explains how you fall OFF the track, and why it's all flashy with 'random' colors.
