PESTO 3 cups basil leaves, loosely packed ¼ pine nuts 4 cloves of Garlic ¾ cup Parmesan Cheese ¼ tsp Salt ¼ cup - ½ cup Olive Oil Combine and chop all ingredients in a food processor except oil. @montychel Pesto is one of the best things to freeze. Try putting pesto in ice cube trays, freeze and then remove from the tray and store in a bag. This way you have portions of it if you dont want to use it all at once. Anyway you freeze it though is fine! In the fridge it will last up to 5 days but try to use it ASAP, the basil leaves are delicate and will break down quickly, so though it will be safe to eat 5 days later, it will not be as delicious.

Looks tasty. I'm glad you roasted the red peppers yourself, at first I thought you were going to use the store bought jarred peppers you mentioned at the beginning. Roasting them yourself is so easy and so much better tasting.
I like to cook chicken breast with a slice of cheese on top, then add a red sauce. I have tried all kinds of red sauce creations (mostly tomato based), but haven't seen this one. Can't wait to try it.
could you share a pesto recipe?
