Something nobody told me when I was learning to parallel stop: when you try to get the skates to release so that you can get sideways, make the blades more upright, NOT edged. You actually want to use the flat of the blades and lose traction. Don't try to edge into the stop until you're established sideways. Don't get discouraged: I'm 31 and have learned how to do it. Like others have already said practice until you get it and don't be afraid to fall in the process.
but you are basically stopping on the inside and outside edges correct? I find my self stopping fine with my outside foot, but my inside always gets caught or it just drags..no matter what side I stop on...I guess im doin a one footed stop then lol
Yes, that it correct: your inside foot uses its outside edge and the outside foot uses its inside edge. I had the same problem you described as far as the inside foot chattering/getting caught and I rectified that issue by using a less aggressive angle. Again, keep that inside foot even more upright and you should see the catching problem go away.
wow the coaches are even benders

To the coaches! Use helmet always, it's pathetic of you not to use a helmet!

try standing at the side of the rink and push your foot out to get used to the sensation that start moving into a check stop
