Trial and error my friend. Go with what sounds good.

He slaps it with one hand, thats it. What he does is he quickly slaps the frets that contain the harmonic so he doesn't always need both hands to make em ring. There are other ways to do this, for example eric mongrain does this a lot in his song 'airtap' (search for it if you want).
