  • @Vaguestyler that would be all of the impurities contained in the beet being scalped off in order to maintain efficiencies at the processing facility. Which in turn uses less lime, less space in the sediment ponds ie far less deleterious environmental impact in the processing of the sugar.

    Maybe you should know what you are talking about before you comment on things you do not understand?

  • @Vaguestyler I grow beets in Canada and we have been told that by removing the green portion of the beet helps in long term storage, as we have to pile beets in large piles for up to 4 months and by large I mean 40000 - 120000 ton piles, by ensuring there is not any regrowth from the beet top while in the pile.

    I realize that in the Netherlands all of the beets are field piled and delivered directly for processing.
