The build used in this video didn't have big enough ailerons with enough throw to turn. It was my first attempt. Once I got the size / throw right I was able to fly as you suggest.
You have ailerons. Why would you use rudder for turns? It helps to learn rudder control for sure, but most of your turning should be done on the right-hand stick. Rudder is mainly used for take-off and landing. It's also used for precision areobatics. Smple pattern flying is aileron/elevator.
