  • Stuffed leg of lamb is scrumptious too. I worked with this Italian guy and he made some. One of his key ingredients was celery leaves, not the stalks.

  • I slaughter lamb at least twice a year as an Arab.

    Best way to do it is to boil the meat with your desire spices for an hour, then digg a whole in the ground, start a fire useing wood chunks, once te fire is ready but the meat on top of it and cover it with a piece of wood or dirt or whatevert, make sure to cover the meat with tin foil before you put it on te ground. you can put onion, pepper, limon, and other things in the meat before you rab it all in tin foil.

    smoke it for 3-5 hours :)

I am making lamb for my very first time and you guys have made me feel confidante to even cook a lamb. This is actually my first time posting as well, you guys are great!   • Not as much as they used to, but there are a few butcher shops nearby where I live. One just a few blocks from the downtown area, one in the outskirts nearby an amusement park, and a few others. But then again, I live in an old fashioned city by US Standards, only three of our tallest buildings are modern and none are truly metal-and-glass. Most of our tallest buildings are big enough to give an urban feel, but would also look right at home 150 years ago.

  • In South Texas on my dad's farm some mexican dudes cooked a lamb similar to this. Except their prep time was only 3 minutes. They took a hammer and knife to break the carcus open added salt and they tied it to a 1/2" rebar with two horizontal rebars, they stuck the rebar on the ground at a 45 deg angle and slow cooked it with mesquite live charcoals. Mane that was the best lamb ive ever had and the fresh handmade corn torillas made it taste better. Thanks for the video.

  • How many bags of charcoal did you use? Did you have to add more charcoal at any point during the 8 hrs that it was cooking?

  • Good question, komatsukid1. We used 4 or 5 large bags. You start out with one bag, divided into 2 piles, and refresh with coals whenever the fire cools. Over our 8-hour session, grill master Chris Norris notes, the fire "got a bit too cool and we had to really bank up the coals to get it going again. So you have to be monitoring continually."
