To the serve, Roddick throws his entire body into it. He gets a lot of power from this. But, it also throws him off balance. On a grass court where the friction can be less than on a hard court, it's easy to see how this mistake can happen. As he's landing his body is naturally intending to put the force down on the feet to absorb the land and regain his balance. His foot slips on the grass instead and he loses his balance.

Note, this can happen to anyone, even Federer. The grass just does it.
