Personally, I think the Carver, because while Escobar needs his henchmen to do all his dirty work for him, while the Carver carried out all of his crime single-handedly, with only the help of his sister. Besides, the Carver has a sense of mystery about him that's inspiring.

But another difference is how the Carver snuck around, while Escobar did everything a bit more openly, completely different, they are both equal in their own ways I think.:)
