  • Uhm... next time, you might seer the chicken right quick, to seal in the juices. This can be done in a number of ways, I like to do a quick saute' in butter. Mushrooms do well with this, too. A bit of chopped onion, carrots and all the stew veggies you want, put them in before you put in the mushroom soup. Using a ceramic pot, put it in the oven while it's still cold and let it heat up with the oven, at around 350F deg, for about 45 minutes to an hour after the oven gets to temperature.

  • You'll know the oven has gotten to temperature when the oven turns off for a bit (with gas, you won't hear the gas for a bit, and with electric, the indicator light will go out for a bit. Both usually click loudly when they've gotten to temp.). About 10 minutes before you take this caserole out, you might want to take it out and sprinkle some croutons on top, or cheeze or those canned onion rings, then put it back in for 10 minutes. Let sit for about 15 minutes before serving. Got bread?

  • If you cut the chicken into bite-sized pieces it will make it much quicker to cook and serve. Bit of parsley on top and YUM!

  • Next time you make this brown your chicken first before adding the soup and you will get a much better flavor:)

  • toss in a wee shredded cilantro (fresh) and you will have that good elivated plus 10

  • I would brown the chicken first and then add the mushroom soup. Make sure you wash that cutting board before putting it away.

  • I suggest giving the chicken a spice rub or adding something to the sauce to give it a little bit of a kick. Balance the flavor. Mushroom and chicken is too much of a base, and the curry in the sauce might not fully balance the chicken. Though, being Italian and German, I suppose I just like accents in my food.

  • It's nice to see someone your age doing the old cooking experiments. A pleasant break from the usual fare you experience from college students and in apartment buildings :oP

  • I like to sear chicken breasts a bit before cooking it in a way you demonstrate it here. Oh, and cutting it into several smaller pieces might reduce the cooking time, as the surface of the meat increases (cooking math, ha ha!)

    You might want to add a touch of nutmeg to the soup still, and a spritz of lemon juice. Fresh onions = always good. The curry is an interesting idea, too. Well, and when the dish is done cooking, some food helping of fresh parsley on top is a nice topping, I'd say :-).

  • Peter dear, if the chicken were healthy, it would still have all its feathers -- not to mention its head! -- and be running around the barnyard. Ha ha! The chicken you want to eat is "healthful".

    I hope you'll forgive me my grammatical nitpicking. That particular misuse of the word "healthy" happens to be one of my peeves. But I still love you madly, no matter what you say or how you say it. As always, I enjoy your videos, regardless of topic.

  • Let me guess: arrogant European? It makes me laugh that there are people who believe if a word isn't used in their part of the world, then it simply doesn't exist. Healthful IS a real word, and even nutritionists in merry old England would use it (if they care about conveying a clear message).

    Healthful: "having or conducive to good health."

    The only healthy chicken is a LIVING chicken!

  • All right, lucapilot, I apologize for any stereotyping. That was not my intent. But I stand by my claim that healthful is absolutely a real word, whether or not it is used by English-speaking Europeans. That was the only reason I got riled up. I was accused and felt I had to set the record straight.

    As for Peter, I'm not worried that he feels disrespected by my correction. At best, he found my comment mildly interesting (though I doubt it). At worst, dull. But I'm certain he was not offended!

    Now, back to Peter's video on another yummy dish! As I said before, no matter what he says or how he says it, Peter's videos are always entertaining and worth watching. :)

  • I edit cookery books and in the UK we don't use the word 'healthful'. It is considered too American.

  • That doesn't surprise me, vynil53. Quite honestly, Americans rarely use it, either. I've only ever heard it from a couple of nutrtionists, myself. It really only bugs me a little. Not so badly that I care to debate the issue. My original comment was only meant to be slightly amusing and perhaps offer a point to ponder. I then responded to fimcd's snarky castigation, and stood up for myself. Truly, whoever wishes to refer to a dead chicken as healthy, please feel free! I won't complain again!

  • Sounds like it good be good. I recommend trying a roast with pork, cream of mushroom, dry onion soup mix, and just a tiny bit of water with some carrots and red potatoes in a crock pot. That is pretty much my favorite meal if you cook it on very low heat for around half a day. :D

  • Happy to see another cooking video. :) I think the mushroom soup with the chicken seems like a great combination. I love curry but wouldn't have thought to put it in, so let us know how it tastes. I'm guessing it's good!

  • On cooking matters, we think a lot a like. Unfortunately, about half the time I have to force myself to eat it after the first taste. It's great fun to be a single male.

  • Peter, you need to stir the curry powder in prior to putting the dish into the oven. You want the flavor of the curry powder through out the dish; not solely in the one spot. Aside from that, the dish you put together looks great!

Perhaps its just my American tastes, but what I've seen from your geriatric cooking vids (which i quite enjoy) alot of the food you eat just seems like it wouldn't be very good. But ah well perhaps its just a generation gap, or a cultural divide.

  • Haha! To a bachelor, cream of mushroom soup is a food group all its own. It's a wonderful "starter" for sauces and casseroles of all sorts, and I always have a couple of cans in the pantry. That little potful probably came out quite tasty, with the splash of curry.

  • I chuckled al the way through this vid Peter. When a cooking instructor starts out with, "I have no idea what I'm doing." One has to take the presentation with a grain or should I say a pinch of salt! LOL

    you put a few pieces of chicken breast in a casserole dish and then salt and pepper them and put in minced onions and oregano, then cover them with extra virgin olive oil, lemon juice, soy sauce, and some water. Put foil on it and cook at 350 for about an hour to an hour and a half. You could also cook potatoes with the chicken or make rice on the side.

  • Next time you should just bread the breasts. Dip them in eggs and then in bread crumbs and put them in the oven. You might even want to sprinkle some olive oil and parmigian cheese on top. It's delicious.

  • Hi Peter - Best cook the chicken first in a little olive oil (1 teaspoon) by frying lightly both sides for 5 minutes each side. Also fry the mushrooms in the same pan. Add a few tablesoons of white wine after a few mins then add tthe mushroom soup and put in the oven for however long you think. I'm no cook but my wife tells me I should always ensure the chicken is cooked through (no pinkness in the meat or blood running when you prick it) otherwise there's a danger of food poisoning.

  • You had me laughing out loud as they say. Just shooting from the hip. Didn't know the mushrooms were too big or if the seasoning would work.. but what the heck. Then film the whole thing and upload it. I just frapp'n loved it. Always always happy to see you post a vid. Made my day.

  • so, just throw a bunch of stuff into a bowl and bake it? thats like a super simplistic way of cooking.

    I would recommend adding some caramelized onions to the mix (chopped into short strands and cook in a pan until nicely browned). And pour the mix over a bed of fettucini or rigatoni pasta. Rice would be fine too.

    two chicken breast

    1 cup of rice

    I can of cream of mushroom soup

    Any kind of seasoning that you like cook for about an hour and a half at 350°

    that is my recipe I hope you like it
