Another good application is Reaper. It's a little more complicated, but you can do quite a bit with it. It's got a never expiring, non crippled demo, so it's basically free. (though the license fee's a quite reasonable) it's great if you wanna get your feet wet with something similar to pro-tools, without forking over tons of cash.
I use Audacity for all of my recording....it is easy and awesome....
