  • To give my lasagna a more hearty flavor, I usually use browned Italian sausages with the casings removed,. I also substitute large curd cottage cheese instead because it has a fabulous flavor. I also use spinach combined with the cheeses and a touch of nutmeg with egg. As for the sauce, I use a canned sauce that has no sugar. I am not fond of sweet sauces--it distorts the integrity of the dish. I sometimes use muenster along with smoked gouda, mozzarella, parmesan, romano--etc.

  • hey just a lil tip with the ricotta cheese lol. you should just squeeze the container and it should just fall out :]

  • I usually do that - but this one was being stubborn.

  • Or you can assmeble it the day before and by the time your ready to cook it the noodles are aleady soft from absorbing the liquid. Cooking time is the same. It is SO much easier this way. They also make "no cook" noddles too if you can find them.

  • EverytimeI make lasagna and I cooked the noodles they ALWAYS break apart and stick together. lol so annoying

  • Do you ever try it with uncooked noodles? I used to make it that way every time & it still came out perfect. They just absorb the liquids from the sauce & tomatoes & cook in the oven. I think it's best to use a bit sloppier sauce/tomato mixture if you do uncooked noodles. =)

  • No i don't think it takes any longer to bake them uncooked. I'd start with an hour & then stab it with a knife. If the knife goes through easy & smoothly, then it's probably done.

  • You have to taste the real Italian lasagne, :) they are real light. the pasta should not boil, but you must soak in hot water just for 5 seconds, otherwise after baking in the oven spring will be too too soft.. :) bye

  • But my brother in law (100% italian) doesn't like to see the garlic or taste big pieces of it. We used to use jarred sauce but since my sister dated/married her hubby it's been fresh sauce for about 9 yrs now and it's so good....just a suggestion!

  • Sorry, also you should try making your own sauce in stead of the Francesco Rinaldi one. You used Cento and that's awesome....just chop up some onions and cook those in olive oil til transluesent then use those Cento tomatoes in the blender and once it's a sauce add to onions add salt/parm cheese or pecorino romano cheese and once it's warmed thru it's done! I add garlic after the onions.

  • haha well, it's not like I'm eating the entire pan full! ;) That's multiple servings for multiple people in just one pan! So, really not that bad - especially if you combine it with a salad or veggies.

  • haha OMG NOOOOO, you see my HIP & the top of my thigh/leg, not my stomach! My stomach is pretty flat actually. Plus I have on a black shirt & dark blue jeans, so it's hard to tell what's what. I have a 32" waist - which for a size 14/16 is pretty fucking nice I'd say ;)

  • I haven't read through all the comments yet so I don't know if you've addressed this or not. When you don't pre-cook the noodles do you add more water to the pan you bake in? I've never tried it but recipes usually say to add water to the pan to keep everything moist if you have uncooked noodles in there.

  • I never added extra water. I pretty much make it exactly the same & the juices from the tomatoes & sauce hydrate the noodles just fine ;)

  • If you want to "spice" up the veggie lasagna add in diced carrots, broccoli & spinach! It's very good that way. Even zucchini, eggplant, or mushrooms are great.

    I used to make a low-carb "lasagna" with egg plant slices instead of noodles. Then layers of meat sauce & cheese. So it was almost like a egg plant parmigiana or something, but layered.

    Of course you can use veggie burgers too for added texture. I was going to for this one, but the ones I bought were nasty & not my usual brand. ;)

    Spinach is soooooo good, and broccoli! Yummmm!!!!! And every once in a while, even though I eat meat, it feels good to do a veggie meal! Just as filling and so much healthier!

  • You can totally skip all the sauce - i just like it that way ;) You can also use a white cheese sauce instead of tomato sauce. Or a combination of both!

  • You can add diced veggies to it also! Like carrots, broccoli, spinach... whatever you like! ;) Spinach is always excellent in lasagna!
