I recently discovered these, and I LOVE them. I agree that the no. 7 is a little on the bulky side, but it's not so bulky that it bothers me. I love the fact that it's so cheap, and that it comes with a carbon steel. I think your point about being "sheeple" friendly is a good one too. Nobody bats an eye at my opinel, especially now that I've finished the handle with a dark stain and some glossy polyurethane. It's much classier now, and also a lot more resistant to moisture, which is nice.
I'd take the Opinel or SAK over that Sabenza any day. Call me crazy, but I love simple traditional folders. Even though I have the same SAK, and an Opinel #8...
Opinels are a time tested design. I have an 8 in Carbon and love it. Takes an awesome edge and cuts better than many of my knives that cost a lot more.
I have the number 9 and I love the knife but there just not quite a good knife if you need it quick because of how it locks.

generally the potato method for an hour or two not the whole night, or soak some paper towels in vinegar and it work the same way
