  • Ya, Coopers is really good but most other BBQ joints in Texas suck.

  • The pork spareribs in D.C. were fatty,greasy,tough, and looked like Flintstone bones. However, the brisket was very good, and the Kreuz sausage was beautiful!

    The spareribs should be taken off the menu.

    Great service though.

  • Talk about good Q - does anyone know if it is still there - or remember Ken Hall's in Fredericksburg, TX? Wow - those were some of the best ribs ever.

    I am a Rudy's fan as well - best brisket and the turkey - yum!

    as far as atmosphere - Salt Lick is hard to beat for sure.

  • I was raised in the Hill Country and worked in BBQ joints, and this place looks like a bad version of what some yankee thinks a BBQ place is supposed to be like. Agree with issieb123, mesquite is the dominant wood, with some oak and pecan for other flavor.

  • don't be so hard of them. They aren't going to make a place 100% identical to what you see in Texas. But it looks like they did a pretty good job and I grew up just north of Austin.

  • I have to disagree with the man in the video. The wood primarily used in the hill country of Texas is Musquite which grows wild all over this state.

  • rudy's is some good barbecue. especially the one in new braunfels. as is coopers in llano and mason. underwood's in brownwood is pretty good also! i'm only 17 but i love my BBQ!!

  • im from one of the towns in the Hill Country. Cooper's BBQ in Llano, TX is very known. won't say where i'm from because that would be betraying MY towns BBQ places.

  • FYI: Yes, the Hill Country of Texas has a number fo great BBQ places; but there are also some fantastic places in Dallas, Houston, West Texas, etc. The Brisket they show here is waaaaay too dry! It should never be cooked that long. Smoke rings look good, though.

  • Cooper's BBQ in Llano is the best...but those smoke rings do look good. Of course, they're only using oak instead of an oak/pecan mixture.

  • coopers, and most bbq-joints west of the Brazos, use mostly mesquite wood.

    i'm from alamo heights texas and i go to blanco, lunkenbach and waring when ever i can. i absolutely love the hill country and i think its great that there is a little bit of our flare in NYC

  • I've been to Hill Country to watch my buddy's band The Doc Marshalls. I'm originally from Houston and I've sampled the food at HC. Its pretty damn good... I had the Czech sausage and beef ribs. Its a little pricey, but than, its in NYC. I know they have to cover their cost of shipping stuff up from Texas. My favorite barbeque back home is Goode Co. They serve up bbq'd duck and a jalapeno cheese bread that's killer.

    Did you see those smoke rings! That is the true sign of good que, a deep red smoke ring. I can not wait to get out and make some bbq recipe videos.
