@MarkHolgate No, there are no differences. The letter "z" is always pronounced like "ts" in German.

@Berkanno: The manuscript consists of several individual parts, none of which is dated explicitly. The first part (from which the technique is taken) is dated by Hans-Peter Hils around 1470.

@DierkHagedorn Ha ! Thanks for information ! I find this escrime's form very instructive and efficient. I practising a few européan médiéval escrima, but i test diferent patchwork of some divers techniques from all the world and epoque. For intant, isn't more efficient ;) I try to improve about this.
