  • Tried this and ended up with an almighty mess, both times..

    Reverted to my original elbow grease method using the same ingredients, minus the sugar, only used the hand blender and added the oil in a steady stream, rather than all at once as this video suggests and it worked a treat..

  • Alton Brown's video on making mayo is much more fun to watch and much more informative. And all around a better and more flavorful recipe. Try using white wine or champagne vinegar. And it's much better if you get an emulsion with the eggs, lemon juice, and vinegar first. And don't be lazy use a whisk.

  • Wait a minute. This clip is called "how to make mayonnaise in a minute" . But its 5 minutes long. This is clearly false advertiesment. =) Other than that nice work.

  • This is an outrage. This has to be taken care of immediately,  Hurry up and ad an extra egg yolk. If that doesnt work you are proabalby not pulsing the right way to get an emmolsion. be gentel at first and puls on and of even if you think it comming to geather. then when you se thick mayo in the botom. floor it.

  • The high acidity in the emulsion destroys any chance of bacteria surviving. If you are still paranoid you can always use pasteurized eggs. They taste the same only the whites are a little cloudy.
