i have a real good idea from this Vid

You could have it so if you make it so that you start with a 1 min and it counts down and then when it gets to zero it explodes but the helth bar goes down too so when you collect coins you get a boost of time!

On certain levels the timer doesn't count and stays to zero.

Mostly the levels within levels like the ice slide for example.
