  • Yes, this is gnocchi--FLORENCE style! Had it in Florence with gorgonzola sauce one day--yum--made with the two spoons method like here, and had it second day--cut into pillow shapes--with butter and sage. Very good video.

  • That is not Gnocchi!

  • Thats ricotta balls not gnocchi. Aswell the butter has already gone through a crystallization process and will not crystallize while you mix. Other then that this is a good demo.

  • Ummm melted butter can re-crystalize.

  • Its spelled recrystallize not re-crystalize. Crystalline fat is formed when butter is made. My comment had to do with the butter being mixed into the ricotta mixture not whether melted butter will recrystallize.

  • I already love RICOTTA, this should be right up my alley.
