Dear Betty, I would love to try this recipe. But there is a problem. I use San Remo brand for macaroni and cheese. They don't mark the packet with oz. They mark it with grams. So, how much grams and cups are there in 8 oz?

I used 80% of the suggested amount of cottage cheese. About 10 minutes prior to removing from the oven, I sprinkled store bought bread crumbs on top. To get the top to brown, I placed the oven on broil for a couple of minutes. After cooking, it was alittle dry so I added some milk for moisture (probably overcooked it alittle bit).

@hopefulone311 Thanks for your nice comment! I don't think that the paprika would be a problem for your kids, but just to be on the safe side, why don't you leave it out. It will make very little difference. I'll have to get back to you on the lipstick--I don't have it with me right now, but I will look on the end to see what shade it is and also to make sure of the brand! Thanks for the compliment!
@hopefulone311 I looked at the lipstick and it is Estee Lauder, #188 Rubellite. I ran out of that shade, but I was able to buy a couple of new tubes on eBay!

Hi Betty, just wanted to say that I love your recipes...coming all the way from Canada. In addition to this dish, I also used 1 cup of italian bread crumbs, or use regular, 2 Tbsp of butter or margarine in a non stick frying pan, melted, added the crumbs to get that butter flavor, then spread over top the casserole. This gives it a nice finish, and also a lovely crust. Just wanted to share that idea with you.
Betty, do you think I could make this exactly the same if I omit the cottage cheese? I've made it this way already but I am making it again tomorrow and I have someone coming who does not care for cottage cheese. Will it work fine or should I add more or less of something else?
@allofmeistaken Hi Kim! Yes, you may leave out the cottage cheese. You could add substitute 2 cups of yogurt, or just make it cheesier by adding about 1 1/2 cups shredded Cheddar and 1/2 cup milk. Either way will be good!
Oh yes, I know this recipe! My mom says this is the only way to macaroni&cheese! It`s soooo good; I always have several helpings during the holidays ;)
@laurysocheerful I wouldn't put raw bacon in, because you will have a very fatty dish. It will be standing in liquid fat when the cheese melts and the bacon cooks. I would cook the bacon first, until crisp, and crumble it and add it to the mixture before baking. You can also reserve some bacon for the top..

As we speak, this delicious dish is baking in the oven and let me just tell you, it smells fantastic. To get my crust extra crunchy, I used another one of Betty's tips and sprinkled everything with some breadcrums before adding the Paprika. Can't wait to dig in, it'll go great with last night's left over chicken :D

Oh, I didn't mean out of the box mac'n'cheese. I meen stovetop from a recipe. Excuse me for being unclear about that. There is some recipes here on youtube. But I think that you can wip up some scrumptious ov your own.

@sabzilicious You can make your own sour cream at home. Sour cream cannot be made with pasteurized cream; the lack of bacteria in the cream will cause the cream to spoil instead of sour. If you have access to unpasteruized heavy cream, you can add 1 Tbsp of vinegar to 2 cups of cream and let the mixture stand out at room temperature for several hours until curdled.
@silentfades Sometimes I do (and I have a Quick Tip on that), but for macaroni, it is very easy to keep it separated without any oil. Some people do not approve of putting oil on pasta, because they think it keeps the sauce from sticking. I personally don't have a strong opinion one way or the other.

For example, tommorrow's 3:30-5:30 lineup includes: Fresh with Anna Olson (Canada), Chef at Home (Canada), Guy's Big Bite (US), Grill It! with Bobby Flay (US), What Would Brian Boitano Make? (Canada) etc. so it's a mix. I find most "Canadian" versions of US networks are like that.

Betty, do you think I could make this exactly the same if I omit the cottage cheese? I've made it this way already but I am making it again tomorrow and I have someone coming who does not care for cottage cheese. Will it work fine or should I add more or less of something else?

@allofmeistaken Hi Kim! Yes, you may leave out the cottage cheese. You could add substitute 2 cups of yogurt, or just make it cheesier by adding about 1 1/2 cups shredded Cheddar and 1/2 cup milk. Either way will be good!

@mesopotamianbeauty If I want the flavor fuller, then I use freshly ground peppercorn. Ground black pepper is a milder flavor.

Oh yes, I know this recipe! My mom says this is the only way to macaroni&cheese! It`s soooo good; I always have several helpings during the holidays ;)

@laurysocheerful I wouldn't put raw bacon in, because you will have a very fatty dish. It will be standing in liquid fat when the cheese melts and the bacon cooks. I would cook the bacon first, until crisp, and crumble it and add it to the mixture before baking. You can also reserve some bacon for the top..

As we speak, this delicious dish is baking in the oven and let me just tell you, it smells fantastic. To get my crust extra crunchy, I used another one of Betty's tips and sprinkled everything with some breadcrums before adding the Paprika. Can't wait to dig in, it'll go great with last night's left over chicken :D

Oh, I didn't mean out of the box mac'n'cheese. I meen stovetop from a recipe. Excuse me for being unclear about that. There is some recipes here on youtube. But I think that you can wip up some scrumptious ov your own.

@sabzilicious You can make your own sour cream at home. Sour cream cannot be made with pasteurized cream; the lack of bacteria in the cream will cause the cream to spoil instead of sour. If you have access to unpasteruized heavy cream, you can add 1 Tbsp of vinegar to 2 cups of cream and let the mixture stand out at room temperature for several hours until curdled.

@silentfades Sometimes I do (and I have a Quick Tip on that), but for macaroni, it is very easy to keep it separated without any oil. Some people do not approve of putting oil on pasta, because they think it keeps the sauce from sticking. I personally don't have a strong opinion one way or the other.

This is such a wonderful comfort food...fantastic dish, I love it. Your kitchen is a wonderful place! You should be on television! We get a channel called the Food Network here in Canada, you'd be perfect on a channel like that. I like posting baking videos, but, I'm shy on camera and often don't appear at all. You have a wonderful, professional presence in front of the camera and would make a great cooking star!

@HattieLovesCattie It features some American programs, but, also features a line-up of Canadian cooks/chefs, etc. with their own shows too, so I think it is a mash-up of your top hits with some local thrown in. For example, tommorrow's 3:30-5:30 lineup includes: Fresh with Anna Olson (Canada), Chef at Home (Canada), Guy's Big Bite (US), Grill It! with Bobby Flay (US), What Would Brian Boitano Make? (Canada) etc. so it's a mix. I find most "Canadian" versions of US networks are like that.
