Hi Karen
Thank you for your video. Being a baker for a number of years, unfortunately i am very surprised to see that you are not using a double boiler or at least holding the pan over boiling water! To claim to be an expert and to treat chocolate like that is almost a sin. This will certainly result in people burning/detempering their chocolate when attempting this recipe.
