yup, when they feel threatened (a fish trying to eat them) they secrete mucins which when water is added to them (ie in the sea) form a mucus gel.

the fish that's trying to eat the hagfish gets a mouthful of mucus and spits the hagfish out

Actually, on one of the shows he ate some bug because one of the girls was going to quit. He said he would if she did. I dont remember what it was, but he downed it like it was nothing.
